Blackfly The Restaurant is one of St. Augustine's newest and most unique restaurants. Having opened in June of 2012, Blackfly has won favors with the local community and tourist alike. We're known for our daily fresh fish specials using local caught fish that you usually don't see on most restaurant menus along with our select fillets of Wahoo, Mahi, Hog Snapper and other specialty fish. The restaurant is under the internationally known Blackfly Brand of Vaughn Cochran, a Florida artist who lives and paints in St. Augustine, Florida and who developed the famous Blackfly Logo. Blackfly is also represented by the Blackfly Outfitter, a fly fishing shop in Jacksonville Florida and Blackfly Lodge, a bonefishing lodge in Abaco Bahamas. Vaughn and Jean Cochran are the owners of the Blackfly Outfitter Retail Store and their travels as fishing resort managers have taken them to Mexico, Belize, Costa Rica, Key West and the Bahamas.
The menu at Blackfly will reflect their travels. Vaughn's internationally recognized artwork and murals can be seen throughout the restaurant along with his Blackfly merchandise in the retail area.
The menu at Blackfly is as varied as shells on a beach in the Bahamas. Mike and Cindy, partners in Blackfly and owners of the Famous Collage Restaurant in downtown St. Augustine are our operational managers. The menu below is the grand result of their combined expertise, their years of experience in bringing the best possible product to the table and the imaginative input of our incredible chef Matt Duley.
Our other partners, Doug and Charlene Bunnell, are long time friends with many successful businesses to their credit. Doug and Charlene were instrumental in completing and directing the various stages of construction while helping us execute the final vision of the entire Blackfly team.
The kitchen at Blackfly is a "Scratch Kitchen", everything is fresh, as local as possible, seasonal and made to order. We know you'll be back because you'll have a hard time deciding what to order every time you come to Blackfly.
The Blackfly image itself was born on a sunny afternoon in Key West after a painting session where Vaughn was practicing his Japanese Sumi-Brush techniques when the thought came to him to try painting a fishing fly using the same method. It was as if he had been struck by a lightning bolt from the "Muse", painting feverishly for the rest of the day on any paper he could find until paper grocery bags became his canvas. Nearly 300 fly paintings later, one fly painting inspiring the next, for hours and hours, the Blackfly was born. 20 years later the Blackfly has become one of the most recognized brand logos in saltwater fly fishing and licensed worldwide.
